Sweet Potato Pie - December 2015
Sweet Potato Pie is easy to share for Christmas dinner, or for a dessert at any family meal. It's very simple to make, and it's a delightful treat, and that's why it's our Recipe of the Month! [caption id="attachment_3249" align="aligncenter" width="300"] Picture from Flickr[/caption] Ingredients: 2 cups mashed sweet potatoes 1 pie crust (or make your own) 1/3 cup butter, softened 1/2 cup sugar 2 eggs, beaten 3/4 cup evaporated milk 1 tsp vanilla extract 1/2 tsp ground cinnamon 1/2 tsp ground nutmeg 1/4 tsp salt Instructions:
- Preheat oven to 425F.
- Cream the butter and sugar. Add eggs and mix well. Add milk, sweet potatoes, vanilla, cinnamon, nutmeg, and salt, mix well. Pour mixture into the pie crust.
- Bake for 15 minutes before reducing heat to 350F and baking until a knife comes out clean when inserted in the center (~35mins). Cool and store in refrigerator until it's time to eat!
You can eat with whipped cream on top if you would like. Sweet potatoes are a great source of vitamins and minerals, and this is a delicious way to eat them!
