Spicy Roasted Sweet Potatoes with Orange and Honey - January 2015
Our January Recipe of the Month is Spicy Roasted Sweet Potatoes with Orange and Honey! A simple recipe with not-too-many ingredients, it's a tasty treat that adds a lot to any meal as a side dish or by itself as a snack! [caption id="attachment_1724" align="aligncenter" width="300"] Recipe featured from FineCooking.com.[/caption] Ingredients: 4 medium sweet potatoes (~2 lb total), peeled, halved crosswise, and quartered lengthwise 3 tablespoons butter, with more for the pan 3 tablespoons honey 1/4 cup orange juice (about one orange, fresh squeezed) 1/4 teaspoon cayenne or red pepper Salt and pepper to taste 1. Pre-heat the oven to 400°F. Butter a large baking dish. In a small saucepan, melt the butter. Whisk in honey, orange juice, and cayenne. 2. Put sweet potatoes in the buttered baking dish, add honey mixture, and toss the pieces well to coat them. Arrange sweet potatoes in a single layer, add salt and pepper. Roast until potatoes are browned and tender, and the juices are thickened (45-55mins). Stir and baste several times with pan juices to ensure even roasting. That's it! Eat and enjoy. The hot pepper adds some spice that works great with the sweetness of the honey and orange. It's a taste combination you have to try, and with this easy recipe there's no excuse not to!
