Salmon with Orange Fennel Sauce - February 2016
It's the end of our second year serving delicious fresh fish in our new store. Salmon is an all-time great fish, perfect for a Valentine's Day dinner, or dinner any time. It's not hard to prepare when it's this Salmon with Orange Fennel Sauce recipe, our Recipe of the Month for February 2016! [caption id="attachment_3979" align="aligncenter" width="300"] Picture and recipe from MyRecipes.com[/caption] Ingredients: 4 salmon fillets 2 teaspoons grated orange rind 1/2 cup orange juice 1 teaspoon chopped rosemary 1 teaspoon fennel seeds, crushed (in a zip-type bag, you can crush with a rolling pin or heavy pan) 1/4 teaspoon salt 1/8 teaspoon black pepper Instructions:
- Combine orange rind, orange juice, rosemary, and fennel seeds in a large zip-type plastic bag. Add salmon. Seal bag and marinate fish in the refrigerator for 20 minutes, turning once. Note: Do not marinate for longer, because the citrus "cooks" the fish, in an interesting process described HERE.
- Prepare broiler. Remove salmon from bag, save the juice. Spray cooking spray onto a broiler pan, and place salmon on pan, skin side down. Sprinkle salt and pepper on top of fish. Broil for 10 minutes, or until fish is flaky when checked with a fork.
- Get bag with marinade in it. Boil marinade in a small pan. Reduce heat and let simmer for 3 minutes, then serve with the salmon.
