Apple Stuffed Acorn Squash!

Acorn squash and apples are two great autumn flavors. Combined, they make for a great seasonal dish! Have it as a small meal, or serve a feast and eat it as a side! Right now you can get homegrown acorn squash and homegrown apples from either Niagara Produce location! The local taste just makes this recipe even sweeter. Ingredients: 1 medium acorn squash 1 cup chopped peeled apple 4 teaspoons honey 2 teaspoons butter 1/8 teaspoon ground cinnamon Directions: 1. Cut the squash in half, discard the seeds (or you might roast the seeds, they're tasty!). Place the squash with the cut side up, in a 9-inch x 5-inch loaf pan. Fill centers of squash with chopped apple. Cover and bake at 400° for 30 minutes. 2. In a microwave-safe bowl, combine honey and butter. Cover and microwave on high for 15-20 seconds or until butter is melted. Drizzle over squash. Sprinkle with cinnamon. 3. Bake until tender (about 30 minutes). Enjoy!
