Grilled Watermelon Salad! Summer is the season for grilling, and for those looking to eat better too, there's a delicious grilled watermelon salad. Grilled watermelon is not as well known as it should be, and it sometimes goes by "watermelon steak" because of how the consistency changes after grilling, and how tasty it is! Niagara Produce is also celebrating National Watermelon Day on August 3rd, so it's a great time to get into the watermelon mood! Source: FoodNetwork.com   1/2 of a 5lb watermelon 1/4 cup balsamic vinegar Extra virgin olive oil Kosher salt 2 cups arugula 1 cup goat cheese   1. Cut watermelon into 3"x3"x1" squares. 2. Pour balsamic vinegar into saucepan and simmer until syrupy. 3. Heat grill or grill pan to medium heat. Coat watermelon with olive oil, then grill until grill marks appear and watermelon is fully cooked (about 2 minutes). Season watermelon with salt and remove from grill. 4. Put 1/4 cup arugula on a plate, followed by grilled watermelon, goat cheese, and some more arugula. Layer another grilled watermelon slice on top, with more goat cheese. Drizzle syrupy balsamic vinegar over the top.
