Garlic Parmesan Tomato Zucchini Bake - July 2015
Tomato-Zucchini Bake is the Recipe of the Month! It's a fast, easy (and delicious!) way to include more local produce in your diet!

Ingredients:
2 large zucchini, cut into quarters
2 large tomatoes, diced
7 garlic cloves, crushed
1/2 cup Parmesan cheese
1tsp oregano
1tsp salt
1/2 tsp ground black pepper
1/3rd cup basil
1. Preheat oven to 350°. Spray 8x8 or 9x11 baking dish with cooking spray.
2. Combine zucchini, tomatoes, garlic, Parmesan, oregano, salt, and pepper in large mixing bowl, then transfer to baking dish. Bake for 25-35 minutes. Garnish with basil and serve warm.

It's quick and easy, healthy, and it takes advantage of our homegrown local zucchini and garlic.
