Asparagus Tomato Parmesan Soup
Spring is here, but there are warm days and cold days around here. With luck, you can eat this soup outside on a deck or picnic table when we have a nice day, and enjoy the fresh veggies. If it's a cold day, you can enjoy the warmth indoors and away from the bad weather. It's an all-weather soup! It's also super easy to make, and it doesn't take long. Asparagus Tomato Parmesan Soup [caption id="attachment_4369" align="aligncenter" width="300"] Photo and recipe from Dixie Chik Cooks[/caption] Ingredients: 56oz broth (I prefer vegetable broth, you can use chicken or beef) 2 cups rice, cooked 1 handful of asparagus, snapped, washed, and cooked 2 vine ripe tomatoes, diced 2 tbsp whole cream 3/4 cup Parmesan cheese, shaved 1 tbsp seasoned salt 2 tbsp Cajun seasoning 1 tsp pepper Instructions:
- Combine all ingredients in a large sauce pan and bring to a slow boil.
- Reduce heat to low, cover, and let ingredients simmer for 15 minutes, stirring occasionally.
